Crispy Keto Pork Bites

Products

1 ½ tbsp blue cheese
1 tbsp butter
190 g thin pork belly strips
3 ½ tbsp onion, diced
2 pinch salt
3 ½ tbsp heavy whipping cream
2 pinch black pepper
*All pink -colored products are essential.

Preparations

1 step

Turn oven to its highest setting on bake or fan forced if you have it. Somewhere around 250ºC/480 °F is what we are looking for.

2 step

Take the pork belly strips and place in an oven dish. Rub in salt. Ensure the pork belly is covered in a thin layer of salt. Place the pork strips in the oven for approx. 30-45 minutes. Keep an eye on them. They will turn a lovely crispy golden brown color and you will see the fat will render out.

3 step

Take a pan and place the butter an onion on a medium heat.Caramelize the onions slowly so they are translucent and nice and sweet. Once onion is cooked keep the heat on a medium and add the heavy cream.

4 step

When cream is warmed through break the blue cheese in and wait for it to melt. Once the cheese is melted place on high heat for a minute or two then pour into a dish.

5 step

Take the pork out of the oven and allow to cool on a paper towel and cut into bite size pieces.

6 step

Serve warm with the sauce.
