Chicken and Egg Muffins

3 tbsp mozzarella cheese, shredded
170 g cooked and shredded chicken
3 eggs, large
1 ½ green chiles peppers
1 ½ tsp cilantro
2 pinch black pepper
2 pinch salt
*All purple -colored products are essential.

Preparations

Preheat the oven to 375°F/190°C. Line cup muffin forms with parchment paper cup liners and set aside.

Fry the chicken breasts in a pan.

3 step

In a large bowl, whisk together egg, green chiles, salt, pepper, mozzarella cheese and cilantro.

4 step

Pour egg mixture evenly into 2 muffin cups and top each muffin cup with shredded chicken and bake in the oven for 10-15 minutes.

Remove from oven and let rest for at least 5 minutes.
