Preparations

In a bowl, combine the butter, parsley, garlic, dijon mustard, lemon juice.

In a skillet, heat the coconut oil over medium high heat. Add the cod fillet.

Season fish with salt and black pepper by your taste.

Cook the fillets for 3 to 4 minutes per side.

Preheat the oven to 425°F/220°C. Line a baking dish with parchment paper. Spread the prepared earlier mixture equally over each fish fillet.

Transfer to the oven and bake for 5 to 10 minutes, or until the fish is easily flaked with a fork.
